This is a copycat version of the famous Gideon's Bakehouse chocolate chip cookie recipe from Disney. Grandkids say they taste identical to the original! Made with various chocolate chips, butter, and a balanced mix of sugars for a delightful cookie.
 Preheat the oven to 400°F.
Line a baking sheet with parchment paper and set aside.
In a medium bowl, combine all of the chocolate chips and stir to mix evenly. Set aside.
In the bowl of your stand mixer fitted with the paddle attachment, mix together the butter and all the sugars for 30 seconds on low speed.
Turn the mixer up to medium speed and mix for 4 minutes until combined and fluffy.
Add in the eggs, vanilla, salt, and baking soda and mix for 1 minute until smooth, scraping the sides of the bowl as necessary.
Turn the mixer to low and add in the flour, mixing until just combined.
With the mixer still on low, add in 1 1/2 cups of the chocolate chip mixture, mixing until incorporated.
Using a large (1/4-cup) cookie scoop, portion the dough and roll it into a ball.
Coat the ball with the chocolate chip mixture, leaving the bottom free from chocolate chips. Press the chips firmly into the dough.
Place the dough balls onto the prepared baking sheet 3 inches apart.
Bake for 8-9 minutes, until the edges and tops are lightly golden.
Allow the cookies to cool for 2-3 minutes on the baking sheet, then transfer to a wire rack to cool completely.
