This Carrot Cake recipe has been cherished for years, originating from my mom Minnie, who made it every Mother’s Day. It includes grated carrots and a delicious cream cheese frosting. A perfect treat to celebrate love and memories!
Combine flour, baking powder, cinnamon, and salt. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, combine eggs, oil, and sugar and beat until smooth.
Stir in the flour mixture and grated carrots until all combined.
Pour into a prepared lamb cake mold.
Bake at 350°F for 40 minutes.
To make the frosting: In the bowl of a stand mixer with the paddle attachment, add cream cheese and butter. Mix well.
Slowly add the confectioner’s sugar and vanilla extract.
Frost the cooled cake and decorate with pecans around the bottom if desired.
