Eggs Benedict Casserole

1: Prepare a 9 x 13 casserole and set aside.

2: Lightly toast English Muffins.

3: Lightly spray a skillet with olive oil.

4: Sauté Canadian Bacon until just lightly brown over medium heat.

5: Quarter the Canadian Bacon.

6: Quarter English Muffins.

7: Layer the English Muffins in the bottom of prepared pan.

8: Top English Muffin layer with Canadian Bacon.

9: Next layer cheese.

10: Whisk the eggs.

11: Add mustard and salt and whisk.

12: Pour egg mixture over layered ingredients.

13: Refrigerate overnight.

14: Place casserole in preheated 350° oven.

15: Bake for 40 minutes or until eggs are set and casserole is lightly browned.

16: For the hollandaise sauce, blend all ingredients (except for butter) on high for 5 seconds.

17: On medium speed, slowly pour in butter until emulsified (about 5-10 seconds). Be careful not to over process.
