Chocolate Chip Cookie

1: Preheat oven to 400 degrees and line a baking sheet with parchment.

2: In a medium bowl, combine all of the chocolate chips and mix evenly, then set aside.

3: In the bowl of your stand-up mixer fitted with the paddle attachment, mix together the butter and all of the sugars on low speed for 30 seconds.

4: Turn the mixer to medium and mix for 4 minutes until combined and fluffy.

5: Add the eggs, vanilla, salt, and baking soda, then mix for 1 minute.

6: Turn the mixer to low and add flour, mixing until combined.

7: Add 1 1/2 cups of chocolate chips to the batter and mix on low.

8: Using a large cookie scoop, portion the dough and make into balls, coating them in chocolate chips, leaving the bottom without chips.

9: Press the chips firmly and evenly into the dough.

10: Place the dough balls onto the lined baking sheet 3 inches apart.

11: Bake 6-8 cookies at a time for 8-9 minutes, until the edges and tops are lightly golden brown.

12: Allow cookies to cool for 2-3 minutes on the baking sheet, then transfer to a wire rack to cool completely.

13: If there are any gaps on the cookies after baking, press chocolate chips into them immediately after removing from the oven.
