A delicious copycat recipe for KFC-style chicken, using baked chicken and avocado oil instead of frying. This recipe features a blend of seasonings and a special coating, similar to Kentucky Fried Chicken.
Season chicken with 1 tsp salt and 1/2 tsp pepper.
Lightly beat eggs in a medium bowl together with 1 tsp salt.
In another medium bowl, whisk flour and cornstarch together.
Add all seasonings to the flour mixture and whisk again.
Add the buttermilk to the flour mixture and rub it into the flour until combined.
Work with one piece of chicken at a time; dip in egg mixture, allow excess to drip off.
Dredge in flour mixture, pressing on the chicken to firmly adhere, and transfer to a plate, skin side up.
When oven temperature reaches 450°F, carefully remove the hot skillet from the oven and add oil.
Immediately place chicken, skin side down, into the skillet and return to the oven.
Bake for 15 minutes, then remove the skillet, flip the chicken, and bake until breasts register 160°F and thighs and legs about 175°F, about 15 minutes longer.
Place chicken skin side up on a paper towel lined wire rack to absorb grease and cool for about 10 minutes before serving.
