1: Combine flour, baking powder, cinnamon, and salt. Set aside. 2: In the bowl of a stand mixer fitted with the paddle attachment, combine eggs, oil, and sugar and beat until smooth. 3: Stir in the flour mixture and grated carrots until all combined. 4: Pour into a prepared lamb cake mold. 5: Bake at 350°F for 40 minutes. 6: To make the frosting: In the bowl of a stand mixer with the paddle attachment, add cream cheese and butter. Mix well. 7: Slowly add the confectioner’s sugar and vanilla extract. 8: Frost the cooled cake and decorate with pecans around the bottom if desired.
